Jam Filled Heart Cookies

Jam filled heart cookies sure are gorgeous, right? Just look at them. they appear so fancy, yet surprisingly they are easy to make. Don’t let these extravagant looking cookies fool you. I would see these cookies all the time, but never thought I would ever attempt making them. Seemingly difficult, I avoided it…until my pregnancy cravings hit! I would do anything to fulfill those cravings! Even making what I thoughht was some fancy cookie. I don’t know if you remember those powdered jelly-filled donuts Entenmann’s used to make? I swear these cookies taste just like that. I sure missed those donuts, until now.

Ingredients you will need for your cookies:

  • 2 Cups Flour
  • 1 Tsp Baking Soda
  • 8 Ounces Vegan Butter
  • 1/3 Cup Coconut Sugar
  • 2 Tbsp Maple Syrup
  • 1 Tsp Vanilla
  • Raspberry Jam
  • Powdered Sugar
  • Pinch of Salt
  • In a large bowl, combine the flour and baking soda
  • In a separate bowl, mix together your vegan butter, maple syrup, sugar, vanilla, and salt
  • Pour the flour mixture in with the other ingredients and knead with your hands until all is combined
  • Wrap in saran wrap and let sit in the fridge for about 20 minutes
  • Preheat your over to 350 degrees while your dough is chilling in the refrigerator
  • When the dough is ready, roll out onto lightly floured parchment paper
  • Cut out cookies with the larger heart shaped cookie cutter
  • Take your smaller heart shaped cutter and cut out heart on half of the cookies, you will be stacking them so 2 cookies actually equals 1 cookie
  • Bake for about 10 minutes or just until they start to golden
  • Once cookies have cooled, spread jam between two cookies and sandwich them together
  • Lightly dust with powdered sugar
