
These chocolate dipped dates with peanut butter are so easy to make and require only 5 ingredients. Dates as I like to call “nature’s candy” have a sweet caramel like taste. They have a very high sugar content, and like bananas, their sweetness intensifies the riper they get. Dates a great quick little sweet treat that is healthy, yet satisfyingly sweet. With so many nutritional benefits such as fiber and potassium, it makes a great replacement for those sugar cravings!
Ingredients for Chocolate-Dipped Peanut Butter Dates
- Medjool Dates (Pitted) if they have pits just be sure to remove them
- Pistachios
- Peanut Butter (Crunchy or smooth) Be sure there is no added sugar
- Vegan Chocolate Chips
- Coconut Oil

What can I replace the peanut butter with?
You can use any other nut butters, almond butter is a good one.
Can I replace the pistachios with something else??
Yes! You can use chopped peanuts, almonds, pecans, walnuts, sesame seeds, shredded coconut, or even keep it simple with just a bit of sea salt.
How Do I Make Chocolate-Dipped Peanut Butter Dates??
Using a sharp knife, cut a single line along the the date lengthwise, pull out the pit, setting it aside. Do this for all of your dates, placing them atop parchment paper on a cookie sheet.

Fill your dates with about a tablespoon of peanut butter. I like to overstuff mine. Once you’ve stuffed each date, pinch them together with your hands so they hold the mixture a little tighter. Kind of like a little mini sandwich.

Put your dates in the freezer for about 15 minutes
While your dates are in the freezer, poor your chocolate chips in a pot over the stove on low until all chips are melted, stir continuously to keep from burning.

Add a tablespoon of coconut oil into your chocolate until incorporated and smooth
Chop up your pistachios and set aside

Remove your dates from the freezer and dip each stuffed date halfway into the chocolate. Sprinkle each date with the chopped pistachios.

After dipping and covered in pistachios, place immediately back on the cookie sheet lined with parchment paper and allow to chill in the fridge before serving.
