In a large bowl, combine the flour and baking soda
In a separate bowl, mix together your vegan butter, maple syrup, sugar, vanilla, and salt
Pour the flour mixture in with the other ingredients and knead with your hands until all is combined
Wrap in saran wrap and let sit in the fridge for about 20 minutes
Preheat your over to 350 degrees while your dough is chilling in the refrigerator
When the dough is ready, roll out onto lightly floured parchment paper
Cut out cookies with the larger heart shaped cookie cutter
Take your smaller heart shaped cutter and cut out heart on half of the cookies, you will be stacking them so 2 cookies actually equals 1 cookie
Baked about 10 minutes or until they just start to golden
Once cookies have cooled, spread jam between two cookies and sandwich them together
Lightly dust with powdered sugar
