Vegan Poke

Vegan poke that taste just like the real deal! This vegan poke is made using marinated watermelon. Super easy and delicious!

I recently came across watermelon poke at a restaurant. Never had I tried vegan poke, but once I did, I was hooked. I couldn’t believe just how good it tasted and how you couldn’t even tell the difference.

I decided to come up with my own version at home as best as I could and I must say, it came out pretty damn good!

Watermelon Poke Sauce

I used a homemade combination of tamari sauce, sesame oil, lime juice, garlic powder, ginger, green onion, and sesame seeds. It’s zesty and gives the watermelon that perfect real poke flavor.


How To Make Watermelon Poke

  • Start by cutting seedless watermelon into small squares.
  • Add watermelon squares to the tamari marinade. Allow watermelon to marinate in the fridge anywhere between 3 hours to overnight.
  • Using a slotted spoon, add watermelon poke to a sauce pan over low/medium heat and cook for about 10-15 minutes just until watermelon is heated and softened.
  • Add watermelon back into the marinade and chill poke in the fridge until you’re ready to serve.

Tamari Marinade Ingredients

  • Lime Juice
  • Tamari Sauce
  • Sesame Oil
  • Ground Ginger
  • Ground Garlic
  • Scallions
  • Sesame Seeds

Vegan Sriracha Mayo

If you’re looking to add a bit of spice to the watermelon poke, Sriracha mayo is the perfect choice, just mix a bit of Sriracha with some Vegenaise and mix in with the poke or drizzle over the top.

Instructions

In a bowl whisk together the Tamari sauce with the lime juice, sesame oil, garlic, ginger, scallions, and sesame seeds. Add the watermelon and mix well. Cover and refrigerate anywhere from 3 hours to overnight.

Heat up a skillet over low/medium heat. Add in the watermelon with a slotted spoon. Cook watermelon for about 10-15 minutes or until most of the water has evaporated and watermelon is warm and soft. Add back into the bowl with the marinade and refrigerate.

Serve watermelon poke over rice and top with Sriracha mayo, sliced avocado, and sea veggies.

Ingredients
  

  • 1 Seedless Watermelon Cut Into Cubes

Tamari Marinade

  • 3 TBSP Tamari Sauce
  • 1 TBSP Sesame Oil
  • 1 TSP Garlic Powder
  • 1 TSP Ginger Powder
  • Black & White Sesame Seeds To Taste
  • 2 Scallions Chopped

Vegan Sriracha Mayo

  • Add Equal Parts Sriracha and Vegenaise

Optional Toppings

  • Sea Veggies To Taste
