Vegan/GF Protein Cookies

These vegan and gluten-free chocolate chip protein cookies are so delicious and quick and easy to make. I make these cookies at least once a week to have on hand as a quick grab-n-go healthy snack. They are made with rich creamy almond butter and include other healthy ingredients such as chia and hemp seeds. These cookies are then baked to perfection with a soft, chewy center.

Vegan Gluten-Free Protein Cookies

  • Cookie Sheet


  • 1 C Almond Butter
  • 1/2 C Pure Maple Syrup
  • 2 Flax Eggs 2 Tbsp flaxseed mixed with 6 Tbsp water
  • 1/2 Tsp Sea Salt
  • 2 Scoops Chocolate Protein Powder Make sure there is no added sugar
  • 1/2 Tsp Baking Soda
  • 4 Tbsp Hemp Seeds
  • 2 Tbsp Chia Seeds
  • 1/2 C Unsweetened Shredded Coconut
  • Stir in desired amount of vegan chocolate chips and chopped walnuts


  • Preheat oven to 350 degrees
  • Line the cookie sheet with parchment paper
  • Using a small ice cream scoop, scoop dough onto lined cookie sheet
  • Bake for about 10-15 minutes

1/2 cup maple syrup

2 Flax eggs (2 Tbsp flaxseed mixed with 6 Tbsp water)

1/2 tsp sea salt

2 scoops chocolate vegan protein powder (make sure it has no added sugar)

1/2 tsp baking soda

4 tbsp hemp seeds

2 tbsp chia seeds

1/2 cup unsweetened shredded coconut

Add vegan chocolate chips and chopped walnuts

Preheat oven to 350 degrees

Use a small ice cream scoop to add dough to a parchment paper lined cookie sheet.

Bake for about 10-15 minutes

Makes about 30 cookies
