Jam Filled Heart Cookies

These jam filled heart cookies look a bit intimidating at first glance but they are actually quite simple to make! They are delicious and beautiful. Great for just about any occasion. The best part is they almost taste just like a jelly filled powdered donut! This recipe is vegan and can be made gluten-free as well.

Equipment

  • Small heart cookies cutter
  • Big heart cookie cutter
  • Cookie Sheet

Ingredients
  

  • 2 Cups White Flour or Gluten free flour
  • 1 Tsp Baking Soda
  • 8 Ounces Vegan Butter
  • 1 Tsp Vanilla
  • 1/3 Cup Coconut Sugar
  • 2 Tbsp Maple Syrup
  • Raspberry Jam
  • Powdered Sugar

Instructions
 

  • In a large bowl, combine the flour and baking soda
  • In a separate bowl, mix together your vegan butter, maple syrup, sugar, vanilla, and salt
  • Pour the flour mixture in with the other ingredients and knead with your hands until all is combined
  • Wrap in saran wrap and let sit in the fridge for about 20 minutes
  • Preheat your over to 350 degrees while your dough is chilling in the refrigerator
  • When the dough is ready, roll out onto lightly floured parchment paper
  • Cut out cookies with the larger heart shaped cookie cutter
  • Take your smaller heart shaped cutter and cut out heart on half of the cookies, you will be stacking them so 2 cookies actually equals 1 cookie
  • Baked about 10 minutes or until they just start to golden
  • Once cookies have cooled, spread jam between two cookies and sandwich them together
  • Lightly dust with powdered sugar
