Watermelon Poke (Vegan)
How to make a delicious vegan poke using watermelon. All the same flavors and texture minus the fish!

- 1 Seedless Watermelon Cut Into Cubes
Tamari Marinade
- 3 TBSP Tamari Sauce
- 1 TBSP Sesame Oil
- 1 TSP Garlic Powder
- 1 TSP Ginger Powder
- Black & White Sesame Seeds To Taste
- 2 Scallions Chopped
Vegan Sriracha Mayo
- Add Equal Parts Sriracha and Vegenaise
Start by cutting seedless watermelon into small squares.
Add watermelon squares to the Tamari marinade, allow to marinate in the fridge anywhere between 3 hours to overnight.
Using a slotted spoon, add watermelon poke to a sauce pan over low/medium heat and cook for about 10-15 minutes until watermelon is heated and softened.
Add watermelon back into the marinade and chill poke in the fridge until you’re ready to serve.
Serve over white rice and sea veggies
