Vegan Gluten Free Cherry Pop Tarts

The cravings for an old fashioned Pop Tart has been out of control for me lately. Growing up I loved Pop Tarts! It was definitely my breakfast treat of choice. The cherry ones especially, you know, the ones with the tasty pink frosting and small red sprinkles on the top. Looking through every health food store with hopes of finding a vegan/gf option, I was always left empty handed. I thought, well… I better try and come up with my own recipe then! After several unsuccessful tries, I finally did it, and let’s just say I ate waaayyyy too many poptarts that day! This recipe taste just like the original thing. I promise you, making a gluten-free vegan poptart is not as hard as you might think!


Add your gluten-free flour, salt, and sugar together in a bowl

Cut your cold butter into small chunks and add into your flour mixture, you can use your hands, fork, or mixer to incorporate with your flour mixture.

Add in your water a bit at a time until it resembles the photo below. You don’t want your dough to be too sticky, if it is, add in some more flour.

Roll your dough into a ball and store in the fridge for about 20 minutes. You can start to pre-heat your oven to 350 degrees while you wait for your dough.

After your dough has chilled, roll out dough onto a lightly floured piece of parchment paper. Cut into rectangle shapes with a pizza cutter.

Add the cut out rectangles to a baking sheet with parchment paper and add about a tablespoon of cherry filling on each one. Spread it out and make sure there isn’t too much jam around the edges, you want most of the jam to be in the center. Too much though will cause them to come apart when baking.

Add the tops and pinch the sides together with your fingers. Take a fork and press over to give it those little marks your see around the edges.

Bake for about 20 minutes. While your pop tarts are baking in the oven, whip up your frosting by added your powdered sugar and almond milk to a mixer. Add in your almond, vanilla, and cherry jam and mix, set aside until your pop tarts have baked and cooled.

Once cooled, spread the frosting on the tops and add your red sugar sprinkles.

For The Pop Tart Crust



1/2 Cups Gluten Free Baking Flour

1/2 Teaspoon Sea Salt

8 Tablespoons Vegan Butter

1 Tablespoon Organic Granulated Sugar

3-4 Tablespoons of Cold Water

Pop Tart Frosting


1 1/2 Cups Organic Powdered Sugar

3 Tablespoons of Unsweetened Almond Milk (or any unsweetened dairy-free milk)

1/2 Teaspoon Vanilla

1/2 Teaspoon Almond Extract

1 Tablespoon Cherry Jam

Red Sugar Sprinkles

Pop Tart Cherry Filling

I used an organic morello cherry fruit spread, you can use whatever you prefer, or even homemake your own. It’s really up to you. I picked up this one at the grocery store and it was perfect for filling. I liked that it actually had gooey chunks of cherry inside of the jam.

POP TART CRUST

  • 1/2 CUPS Gluten-Free Baking Flour
  • 1/2 TSP Sea Salt
  • 8 TBLS Vegan Butter

  • 3-4 TBSP Cold Water or more as needed

POP TART FROSTING

  • 1/2 Cups Organic Powdered Sugar
  • 3 TBSP Unsweetened Almond Milk or any non dairy milk
  • 1/2 TSP Vanilla
  • 1 TBSP Cherry Jam
  • Red Sugar Sprinkles

  • Any Organic Cherry Fruit Spread I used a organic morello cherry spread but you can use any kind you like.

  • Once cooled, spread the frosting on the tops and add your red sugar sprinkles.
